    Tuna-Cucumber Salad w Peanut Dressing

    1/8 cup fat-free chicken broth, reduced-sodium
    2 1/4 tsp low-sodium soy sauce
    2 1/4 tsp reduced-fat peanut butter
    1/4 tsp sesame oil
    1 can canned chunk white tuna in water, Clover Leaf Spicy Thai Chili Flaked Light Tuna (85 g)
    1 cup cucumber(s), diced
    1 medium scallion(s), chopped
    2 Tbsp cilantro, fresh, chopped
    2 cup romaine lettuce, chopped


    Recipe



    In a small bowl, whisk together chicken broth, soy sauce, peanut butter, and sesame oil. Set aside.

    In a medium bowl, combine tuna, cucumber, scallions, and cilantro. Toss to combine. Add dressing and toss to coat. Add Romaine lettuce and toss to coat. Serve immediately.
