Tuna, White Bean & Roasted Red Peppers

Recipe Introduction
Take the night off! This tasty meal requires only a little assembly -- no actual cooking necessary. Serve with warmed, crusty Italian bread, and fresh strawberries.
List of Ingredients
2 cups fresh baby spinach leaves, stemmed and washed
1 - can white beans (cannellini or great northern, 15 oz.), rinsed and drained
1 or 2 - roasted red peppers (from a jar), chopped
1 - can solid white albacore tuna packed in water (6 oz.), drained
1/4 cup chopped fresh Italian parsley
2 tbsp. balsamic vinegar
Recipe
1 Place spinach in a shallow serving dish.
2 In a mixing bowl, combine beans, red peppers, tuna and parsley. Mix balsamic vinegar and 1 or 2 tbsp. liquid from pepper jar; add to tuna-bean mixture.
3 Mound tuna mixture on the dish with spinach. Garnish with a parsley sprig, if you like
