Warm Mushroom Salad

Recipe Introduction
Salads make a wonderful course, whether you serve them at the beginning, alongside, or after a meal. This salad combines the best of cool lettuces and warm mushrooms.
List of Ingredients
2 1/2 tablespoons balsamic vinegar
3 tablespoons port wine
1/4 teaspoon garlic, finely minced
8 ounces of sliced, fresh white mushrooms
1 teaspoon margarine
ground black pepper to taste
Leaf lettuce of your choice for 4
1 teaspoon fresh parsley or any fresh herb, chopped
Recipe
1. In a non-stick skillet, heat 1 1/2 tablespoons of water with wine, vinegar and garlic to a boil.
2. Add mushrooms and simmer until cooked and liquid is evaporated.
3. Add margarine and seasoning, and arrange on a bed of the lettuce.
4. Serve right away, with a baguette or other suitable low-fat or no-fat bread.
