layered vege salad with avocado & salsa

List of Ingredients
1 cup baby rocket leaves
1 large carrot, coarsely grated
1 Lebanese cucumber, coarsely grated
1 medium avocado, peeled and seeded
1 tbs lemon juice
1 tbs low-fat natural yoghurt
100g cherry tomatoes, halved
1 tbs coriander leaves, finely chopped
1 tbs lime juice
50g corn chips Recipe
Layer the rocket, carrot and cucumber in individual serving bowls. Combine the avocado, lemon juice and yoghurt in a bowl and mash until smooth. Combine the cherry tomato, coriander and lime juice in a separate bowl and mix well.
Spoon the avocado puree over the layered vegetables and top with the tomato salsa. Serve with corn chips.
