tomato, feta and oregano salad

4 vine-ripened tomatoes
¼ red onion, sliced into thin wedges
120g reduced-fat fetta
1 tsp dried oregano
1 tbs olive oil
1 tbs red wine vinegar
salt and freshly ground black pepper to taste
12 black olives in brine, pitted and sliced
Recipe
Thickly slice the tomatoes and arrange on a serving platter. Scatter over the red onion and crumble over the fetta.
Whisk together the oregano, olive oil and vinegar. Season to taste with salt and black pepper. Drizzle over the tomato salad and top with the sliced olives.
