Black Bean Burritos

0.5 teaspoon salt
0.25 teaspoon freshly ground black pepper
- pinch a of sugar
6 - flour tortillas
1 15-ounce can black beans, drained and rinsed
1.5 cups cooked rice
0.75 cup non-fat sour cream
1/3 cup fresh cilantro leaves
1 small onion, chopped
1 15-ounce can diced tomatoes, drained
2 cloves garlic, peeled
1 - jalapeño chili pepper, stemmed and seeded
0.25 cup chopped, fresh cilantro
1 cup water
Recipe
1 For the salsa:
2 Combine all of the salsa ingredients in a small saucepan. Bring to a boil, adjust the heat so that the mixture simmers and cook until 1/2 of the liquid evaporates, about 15 minutes. Turn off the heat and let cool.
3 Pour the mixture into a blender and puree. Chill.
4 (This can be made in advance and stored in the refrigerator for up to 1 week.)
5 For the burritos:
6 Preheat the oven to 350°F.
7 Have the kids help you wrap the tortillas in foil and warm them in the oven for about 10 minutes.
8 Heat the beans and rice separately in the microwave.
9 Everyone can create their own burritos with rice, beans, salsa and sour cream. Garnish with extra salsa, sour cream and cilantro leaves if desired.
