    For the Arepas
    1/2 cup of yellow cornmeal
    1 1/2 cups of water
    tsp. of sugar
    1/2 cup of shredded mozzarella
    1/2 cup of frozen corn kernels, thawed
    2 Tbsp. of vegetable oil

    Recipe



    In a medium saucepan combine cornmeal, water and sugar. Cook over low heat, stirring constantly, until mixture thickens. Cool. Add the cheese and corn kernels and mix thoroughly.
    In a large frying pan heat oil over medium heat. Separate batter into dough balls using a heaping tablespoon. Flatten with a spatula and fry until golden brown on each side.

    For the sandwiches
    2 Arepas aka corn cakes
    3-4 ounces of shredded cotija cheese (mozzarella may be substituted if you cannot find cotija)
    1 tablespoon of salted butter, softened

    Pile the shredded cheese onto one of the arepas. Cover with the other one. Spread butter lightly over each arepa. Grill over low heat for approximately 3 minutes per side.
