    Havarti and Grilled Vegetable Sandwich

    2 sweet red peppers
    2 sweet yellow or orange peppers
    1 zucchini
    1 eggplant
    1/2 cup (125 mL) purchased or homemade vinaigrette dressing
    4 flat oval rolls, with or without black olives, cut horizontally in half
    6 oz (200 g) Canadian Havarti*, jalapeño or plain, thinly sliced

    Recipe



    Cut peppers into 6 wedges; core and seed. Cut zucchini crosswise in half, then lengthwise into 1/4-inch (6 mm) slices. Cut eggplant into 1/2-inch (12 mm) slices.

    Brush vegetables with vinaigrette and place directly on preheated grill. Cook, with lid open, over medium heat until tender and slightly charred, 8 to 10 minutes for peppers and eggplant, and 5 or 6 minutes for zucchini. Turn occasionally and brush with vinaigrette. Remove from grill; sprinkle with salt and pepper to taste.

    Brush inside of rolls with remaining vinaigrette. Toast both sides lightly on grill. Layer vegetables and Canadian Havarti on bottom half of rolls; replace tops. Cut in half to serve.





    *For a change of taste, use Canadian Feta or Mozzarella, plain or smoked.





    For picnic lunches, prepare a larger version of this Italian sandwich. Use 1 round, flat loaf of Italian or French bread and cut into wedges to serve. Bound to become a family favourite!
