    Lobster Artichoke Sandwiches on Focaccia

    16 ounces cooked lobster meat
    1/2 cup non-fat mayonnaise
    4 ounces canned artichoke hearts, rinsed and chopped
    - - salt and pepper to taste
    4 small loaves of focaccia, sliced in half
    4 - lettuce leaves, green leaf, bibb or romaine, shredded


    Recipe



    1 For the lobster salad:
    2 In a mixing bowl, combine the lobster, mayonnaise, artichoke hearts, salt and pepper.
    3 For the sandwiches:
    4 Lay the focaccia slices out on a work surface and divide the lobster mixture among the sandwiches. Top the sandwiches with the shredded lettuce and place the focaccia tops on each sandwich.
    5 Cut the sandwiches in half on the diagonal and serve.
