    Nutty Cucumber Sandwiches

    List of Ingredients




    1/2 cup fresh snow pea pods, trimmed
    8 thin slices rye bread
    3 to 4 ounces soft goat cheese (chevre)
    1/3 cup seasoned roasted soy nuts (such as ranch or garlic)
    1/2 of a medium cucumber, peeled and thinly sliced
    1 medium tomato, thinly sliced
    Salt

    Recipe



    1. In a saucepan cook the pea pods in lightly salted boiling water for 2 minutes. Drain; rinse with cold water. Drain again.
    2. Spread one side of each bread slice with goat cheese. Sprinkle 4 of the bread slices with the soy nuts, gently pressing nuts into the cheese. Top with cucumber, tomato, and pea pods. Sprinkle lightly with salt. Top with remaining bread slices. Makes 4 servings.
