    Shrimp Salad Sandwiches on Focaccia

    1 pound small or medium shrimp, steamed, peeled and deveined, then coarsely chopped
    0.5 cup mayonaise, non-fat
    0.25 cup finely diced celery
    0.25 cup finely diced, sweet onion
    1 teaspoon lemon zest
    - - salt and pepper
    4 small loaves focaccia, sliced in half
    4 - lettuce leaves, green leaf, bibb or romaine, shredded
    4 large slices ripe tomato, sliced very thin

    1 For the shrimp salad:
    2 In a mixing bowl, combine the shrimp, mayonnaise, celery, onion and lemon zest. Add salt and pepper to taste.
    3 For the sandwiches:
    4 Lay the focaccia slices out on a work surface and divide the shrimp mixture among the sandwiches. Top the sandwiches with the shredded lettuce and a slice of tomato. Place the focaccia tops on each sandwich.
    5 Cut the sandwiches in half on the diagonal and serve.
