Swordfish Sandwiches on Focaccia

0.5 cup mayonaise, non-fat
2 teaspoons minced, fresh jalapeño pepper
2 teaspoons freshly grated lime zest
2 teaspoons olive oil
- - salt to taste
- - freshly ground black pepper
4 - swordfish fillets, about 4 ounces each
4 small loaves focaccia, sliced in half
4 large lettuce leaves (bibb, green leaf or romaine), shredded
Recipe
1 For the sauce:
2 In a large mixing bowl, combine the mayonnaise, jalapeño pepper and lime zest.
3 For the swordfish:
4 Preheat the grill.
5 In another small bowl, combine the olive oil, salt and pepper. Brush the swordfish with the oil mixture on all sides.
6 Grill the fillets on a hot grill for 3-4 minutes on each side, depending on the thickness of the fillet.
7 Let the fillets cool to room temperature. Once cool, flake the fish with a fork and gently toss with the mayonnaise mixture.
8 For the sandwiches:
9 Lay the focaccia halves out and divide the swordfish mixture among the sandwiches, then add the shredded lettuce.
10 Cut the sandwiches in half on the diagonal and serve.
