Tostadas with Corn and Jalapeño Cheddar

If you've got tortillas in the fridge, you're already halfway done preparing tonight's healthful -- and tasty -- entrée. Serve with fat-free refried beans (from a can); lime wedges; cilantro sprigs.
List of Ingredients
4 - corn or flour tortillas (no added fat)
1 cup your favorite salsa
1 cup corn kernels (fresh or frozen)
1/4 cup (1 oz.) grated jalapeño cheddar or jalapeño jack
2 - scallions, thinly sliced
Recipe
1 Preheat oven to 400 degrees F. Spray a baking sheet with nonstick cooking spray. Place tortillas on baking sheet.
2 Spread salsa on tortillas. Sprinkle with corn and cheese. Top with scallions.
3 Bake for 8 to 10 minutes, until cheese is melted. Cut and serve.
