50g reduced-fat ricotta
¼ tsp cinnamon
1 tsp honey
2 thick slices of fruit bread, lightly toasted
1 large pear, cored and sliced
2 tsp lemon juice
Recipe
Combine the ricotta, cinnamon and honey in a food processor and blend until smooth. Cut the toast in half diagonally and spread with the ricotta mixture.
Divide pear slices between the toast halves and arrange them in a stack on individual serving plates. Sprinkle with lemon juice and serve.
