    4 pita breads
    2 Tbsp. olive oil
    1 red pepper, cored, seeded and sliced thin
    1 green pepper, cored, seeded and sliced thin
    1/4 tsp. red pepper flakes (more or less to taste)
    1/4 tsp. dried oregano
    Pinch salt
    Fresh ground black pepper to taste
    8 ounces thinly sliced cappicola ham (thinly sliced deli ham may be used)
    1/4 cup chopped green Spanish olives
    2/3 cup each Wisconsin Asiago, Pepper Jack and Provolone cheese, grated

    Recipe



    Place pita breads on a broiler pan. Set aside.

    In a large sauté pan over high heat, sauté the peppers in the olive oil, stirring occasionally until the peppers are soft. Season with pepper flakes, oregano, salt and pepper. Add ham to the pan and continue to sauté until it browns a little. Stir in olives.

    Turn broiler on and place rack eight inches away from broiler.

    Spread pepper and ham mixture evenly over each of the pita breads.

    Sprinkle the sandwiches with the cheeses and place under broiler for about four minutes or until the cheese is bubbling and just beginning to brown.
