Recipe Introduction
If you like a hot bite to sushi, stir a dab of wasabi into the dipping sauce. Alternatively, smear wasabi onto the rice when making the sandwiches. You can buy sushi rice and nori from supermarkets and Asian food stores
List of Ingredients
1 ½ cups sushi rice
2 cups water
2 tbs rice vinegar
2 sheets sushi nori (seaweed)
1 medium avocado, mashed
200g canned tuna in brine, drained and flaked
¼ cup pickled ginger
soy sauce to serve Recipe
Place the rice and water in a saucepan, cover with a lid and bring to the boil. Reduce the heat to very low and cook, covered, for 15 minutes. Remove from the heat and stand, covered, for 10 minutes.
Transfer to a wide bowl and add the vinegar. Use a large metal spoon to gently combine and turn the rice a few more times to hasten cooling. Leave to cool.
Lay the nori sheets on a clean work surface. Top each piece with half of the rice and, with wet hands, smooth to a flat base. Top one with the avocado, tuna and pickled ginger. Flip the remaining piece of nori and rice on top of the filling to make a sandwich. Press together firmly.
Cut into 4 squares, then cut each square in half diagonally. Serve with soy sauce.
