1 cup (250 mL) packed fresh basil
1 clove garlic, quartered
2 tbsp (30 mL) toasted pine nuts
1/2 cup (125 mL) grated Canadian Parmesan
1 cup (250 mL) olive oil
Salt and pepper, to taste
Recipe
In a food processor or blender, blend basil, garlic, pine nuts and cheese until almost smooth. While blending, slowly add oil until pesto is thick and smooth. Add salt and pepper. Keep in refrigerator
