Cucumber-Dill Dip

1 large cucumber, peeled, seeded and chopped
-1/2 teaspoon salt
-1 cup sour cream
-1/4 cup chopped fresh dillweed
-1 teaspoon prepared horseradish (optional)
Recipe
Toss the chopped cucumber with salt; let stand for 15 minutes. Rinse and drain the cucumbers.
Pat the cucumber dry with paper towels. Using a food processor fitted with a metal blade, process cucumber and sour cream until smooth. Add dillweed; add horseradish, if desired. Stir well. Cover and chill until ready to serve.
