Even if you hated lima beans as a kid, you'll love this guacamole clone.
List of Ingredients
2 10-ounce (300-g) packages frozen lima beans
- - Juice of 2 limes
2 - green onions, chopped
1 tablespoon low-fat silken tofu
1 tablespoon water
1 teaspoon minced jalapeño pepper
1/4 teaspoon sea salt
1/4 teaspoon ground cumin
1/2 cup diced vine-ripened tomato
2 tablespoons chopped fresh cilantro or parsley
Recipe
1 Cook lima beans in boiling water until soft, about 10 minutes.
2 Place lima beans, lime juice, green onions, tofu, water, jalapeños, salt and cumin in a food processor and process until smooth.
3 Transfer to a bowl. Stir in tomatoes and cilantro or parsley. Serve as a garnish for any Southwestern or Mexican entrée, or serve by itself with salsa and baked tortilla chips.
