Spinach Pesto

Recipe Introduction
In minutes, IQF (individually quick-frozen) spinach can transform a few standard pantry items into a satisfying dish with little more effort than it takes to open a package. Whip up spinach pesto for a casual appetizer, served on crostini.
List of Ingredients
1/4 cup walnuts, toasted
2 pieces white bread, crusted
1 each garlic clove,
1/2 cup cooked spinach,
1/2 cup plain low-fat yogurt,
1/2 cup grated Parmesan cheese,
1 tablespoon olive oil,
1/4 teaspoon salt, or to taste
1/4 teaspoon freshly ground black pepper, or to taste
Recipe
1 In a food processor or blender, whirl walnuts, bread and garlic. Blend in spinach, yogurt, Parmesan and oil. Season with salt and pepper.
