    List of Ingredients




    1 small plum tomato
    1 yellow pepper
    1 avocado
    2 tbsp (15 mL) chopped fresh basil or coriander
    1 tsp (5 mL) lime juice
    pinches of salt and pepper
    8 large, thick-cut potato chips

    Recipe



    1. Slice plum tomato in half. Squeeze out and discard seeds. Chop into 1/4 inch (0.5 cm) pieces. Core and seed yellow pepper. Peel and pit avocado. Chop both into similar-size pieces as tomato. In a bowl, stir tomato with yellow pepper and avocado. Stir in fresh basil or coriander, lime juice and pinches of salt and pepper. Spoon onto potato chips.
