APPLE FILLING
4 Granny Smith or other tart apples, peeled and sliced
1/2 cup (3 1/2 oz/105 g) natural cane sugar
4 tablespoons apple juice or cider
1 teaspoon ground cinnamon
1 teaspoon pure vanilla extract
2 teaspoons cornstarch
DOUGH
No-stick cooking spray
3/4 cup (3 1/2 oz/105 g) unbleached all-purpose flour
1/2 cup (2 1/4 oz/70 g) whole-wheat pastry flour
1/2 cup (2 1/4 oz/70 g) oat flour
3/4 cup (5 oz/150 g) natural cane sugar
3/4 cup (5 oz/150 g) packed brown sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/8 teaspoon sea salt
2 cups (6 1/2 oz.200 g) rolled oats
1/2 cup (2 oz/60 g) wheat germ
3/4 cup (6 oz/180 g) unsweetened applesauce
1/4 cup (2 fl oz/60 ml) canola oil
1/4 cup (2 fl oz/60 ml) fat-free egg product or 1 whole egg
1 tablespoon pure vanilla extract
Recipe
1 To make the apple filling: In a large saucepan, combine apples, sugar, 2 tablespoons of the apple juice or cider, cinnamon and vanilla. Simmer over medium heat until the apples are tender, about 5 minutes.
2 In a small bowl, stir together the remaining 2 tablespoons apple juice or cider and cornstarch. Add to the hot apple mixture, stirring constantly, until the mixture thickens, about 4 minutes. Remove the pan from the heat.
3 To make the dough and bake the bars: Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch (23x32-cm) baking pan with cooking spray. Into a large mixing bowl, sift together all-purpose flour, pastry flour, oat flour, natural cane sugar, brown sugar, baking soda, cinnamon and salt. Stir in oats and wheat germ.
4 In a food processor, blend applesauce, oil, egg product or egg and vanilla. Add dry ingredients and process to mix.
5 Transfer half of the dough to the prepared pan. Spread it evenly to cover the bottom. Spread the apple filling on top. Spread the remaining dough over the top.
6 Bake for 25 to 28 minutes, until browned and set.
