1/3 cup cocoa
1/3 cup hot water
150g dark chocolate, melted
150g reduced fat butter, melted
1¼ cup brown sugar
100g ground almonds
4 eggs, separated
2 tbs icing sugar, sifted
Recipe
Preheat oven to 160°C. Spray a 20cm square cake tin with cooking spray.
In a large bowl combine the cocoa and water. Stir until smooth. Add the chocolate, butter, sugar and almonds. Stir in the egg yolks one at a time.
Beat the egg whites with an electric mixer until soft peaks form. Gently fold into the chocolate mixture.
Pour into the prepared tin and bake in the oven for about 1¼ hours or until firm. Remove cake from pan and dust with the icing sugar.
