List of Ingredients
50g cellophane noodles
3 tbs rice vinegar
4 tbs crushed peanuts
500g whole cooked prawns, shelled and deveined, finely chopped
¼ cup basil leaves finely sliced
¼ fresh coriander, finely chopped
4 leaves bok choy, finely shredded
2 cabbage leaves, finely shredded
5 shallots, chopped
1 medium carrot, finely shredded
16 rice paper rolls
4 tbs Thai satay sauce
Recipe
Soak the noodles in a bowl of hot water, rinse with cold water, drain. Chop into pieces and combine the with vinegar, nuts and prawns.
Combine the fresh herbs, bok choy, cabbage, shallots and carrot together. Stir in the prawn mixture.
Working with 1 wrapper at a time, soak the rice paper in warm water for 30 seconds and lie on a flat surface. On each wrapper place a small amount of the prawn mixture. Roll up tightly, folding the sides in to enclose the filling. Continue rolling and folding until all ingredients are used.
Serve with the satay sauce.
