2 tsp canola oil
1 bell pepper, cored and diced
1 bunch scallions, sliced
5 medium red-skinned potatoes (1 lb), cut in 1/2-in. pieces
2 cans (14 1/2 oz each) vegetable broth
1/3 cup unflavored soy protein powder
3 cups soy milk
2 cans (15 1/4 oz each) whole-kernel corn, drained
3/4 tsp dried thymeRecipe
1. Heat oil in a large saucepan over medium-high heat. Add bell pepper and white part of scallions. Sauté until lightly browned.
2. Add potatoes and broth, bring to a simmer and cook 10 minutes or just until potatoes are tender.
3. Whisk soy powder and soy milk until blended. Add to saucepan with the corn, scallion greens and thyme. Simmer 5 minutes to blend flavors
