List of Ingredients
1 can (28 oz) diced tomatoes in rich, thick juice with roasted garlic, not drained
1 can (14 1/2 oz) reduced-sodium beef broth
8 oz stick pepperoni sausage, diced
1 1/2 cups sliced fresh mushrooms
1 large green bell pepper, diced
1 large red onion, chopped
1 cup water
1 Tbsp dried Italian seasoning
1 cup shredded part-skim mozzarella cheeseRecipe
1. Mix all ingredients except cheese in a 3-qt or larger slow-cooker. Cover; cook on low 6 to 8 hours or until vegetables are tender.
2. Ladle into soup bowls; sprinkle with the cheese.
