Lin’s Spinach and Bean Soup

List of Ingredients
½ cup onion, chopped
1 Tb olive oil
1 clove garlic, minced
1 package frozen spinach
1 cup water
¾ tsp salt
1 cup canelini beans
1 can chicken broth
salt and pepper to taste
Recipe
Saute ½ cup chopped onion in 1 Tbsp. of olive oil. Add 1 clove of minced garlic. Add 1 package of frozen spinach, 1 cup of water, and ¾ tsp. of salt. Cook for 15 minutes. Add 1 can of white canelini beans and 1 can of chicken broth. Mash some of the beans in the pot. This will thicken the soup. Cook for about 20 minutes. Add more water as needed if the soup is too thick. Season with salt and pepper to taste.
