1 tbs olive oil
1 onion, finely chopped
2 carrots, finely chopped
2 sticks celery, finely chopped
5 cups chicken stock
400g canned diced tomatoes
400g canned cannellini beans, rinsed and drained
100g dried macaroni
salt and freshly ground black pepper
3 tbs parsley, finely chopped
50g parmesan, freshly grated Recipe
Heat the olive oil in a large saucepan. Add the onion, cover and cook over low heat for 10 minutes until the onions sweat and soften without colouring. Add the carrot and celery and cook without colouring for 5 minutes.
Add the chicken stock, canned tomatoes and drained cannellini beans. Bring the mixture to the boil, add the macaroni and cook over medium heat 10-15 minutes until tender. Season to taste and stir through parsley. Serve in warm soup bowls with the grated parmesan.
