Recipe Introduction
A typical moussaka recipe calls for 1 cup of olive oil to fry the eggplant. Grilling the eggplant slices uses no fat and makes for a much healthier dish.

3 - large eggplants (about 4 lbs/1.8 K total), peeled and cut into 1/2 inch (1.25-cm) slices
1 - large onion, chopped
2 tablespoons chopped fresh garlic
1 28-ounce (840-g) can low-sodium Italian plum tomatoes, drained and chopped
2 cups (12 oz/360 g) cooked brown rice
1 teaspoon dried oregano
1/4 teaspoon ground allspice
1/4 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
1/4 cup chopped fresh parsley
3/4 cup (6 fl oz/180 ml) fat-free egg product
3/4 cup breadcrumbs
12 ounces (360 g) ground fat-free soy "meat"

Recipe
1 Preheat a stovetop grill pan or light an outdoor grill.
2 Spray grill lightly with cooking spray. Cook eggplant slices until browned on both sides, about 8 minutes. Set aside.
3 Preheat oven to 350 degrees F (175 degrees C).
4 Spray a large sauté pan once with cooking spray and heat pan over medium-low heat. Add onions and cook until soft, about 5 minutes. Stir in garlic and cook 15 seconds.
5 Add soy meat, breaking it up with a wooden spoon, and cook 3 minutes.
6 Stir in tomatoes, rice, oregano, allspice, salt, pepper and 2 tablespoons of the parsley. Cook over low heat until thick and fragrant, about 15 minutes. Remove from heat.
7 In a small bowl, combine egg product and the remaining 2 tablespoons parsley. Stir into soy meat mixture.
8 Line the bottom of a lasagne pan or other large baking dish with eggplant slices. Spread half of the soy meat mixture on top. Cover with a second layer of eggplant and meat. Sprinkle with breadcrumbs.
9 Bake until browned and bubbling, about 30 minutes.
