    1/2 cup vegetable broth, divided
    1-1/2 cups sliced green onions
    1 Tbsp. minced peeled gingerroot
    1 Tbsp. minced garlic
    6 cups chopped broccoli
    2 cups chopped red pepper
    3 Tbsp. soy sauce
    3 Tbsp. PLANTERS Dry Roasted Peanuts, chopped
    MINUTE Premium White Rice or MINUTE Brown Rice

    HEAT 1/4 cup of the vegetable broth in large skillet over medium-high heat. Add green onions, ginger and garlic; stir-fry 1 to 2 minutes.
    ADD broccoli, red pepper, soy sauce and remaining 1/4 cup vegetable broth. Bring to boil; reduce heat to low. Cook 5 to 6 minutes or until broccoli is tender, stirring occasionally.
    STIR in peanuts. Serve immediately over hot cooked MINUTE Rice.
