Roasted Eggplant , Tomato & Feta Towers

List of Ingredients
1 large eggplant, sliced into 1cm thick rounds
2 tomatoes, sliced into rounds (same amount as the eggplant)
250g Feta cheese, cut into thin slices
Fresh basil leaves, shredded
Ground fresh pepper
Olive oil
Recipe
Sprinkle the eggplant with salt and set aside for ½ hour. Rinse the eggplant slices and dry with kitchen paper. Fry the slices of eggplant in a little oil until slightly softened.
Layer a baking tray with the eggplant. On top of each slice of eggplant place a slice of tomato, some basil and top with a slice of fetta. Drizzle each small tower with a little olive oil and sprinkle with ground pepper. Bake in a hot oven for 20 minutes. Serve with a side salad and crusty bread.
