    Sauteed Spinach with Almonds and Raisins

    1 lb fresh spinach, stems trimmed

    1 tablespoon olive oil

    1 tablespoon butter

    1 1/2 oz sliced almonds or pine nuts

    2 oz golden raisins

    1 teaspoon grated fresh ginger

    1/4 teaspoon salt

    Pinch pepper



    Recipe



    Heat olive oil and butter in large skillet over medium heat. Add almonds or pine nuts, raisins, ginger and salt; sauté until nuts are golden brown, about 3 minutes. Using slotted spoon, transfer almond mixture to small bowl.


    Sauté spinach in same pan over medium heat until wilted, about 4 minutes. Stir in almond mixture and pepper. Serve immediately.
