    1 pound firm tofu

    1 TB oil
    1/4 cup onions, chopped

    6 TB apricot jam
    5 TB frozen orange juice concentrate
    5 TB water
    2 TB prepared mustard
    1 TB vinegar
    1/2 tsp coriander
    1/2 tsp salt
    1/2 tsp ginger
    1/8 tsp garlic powder
    1/16 tsp cayenne (optional)

    Recipe



    Preheat oven to 350 degrees F.

    Slice into 1/4" slices:
    1 pound firm tofu

    Lightly fry slices in 1 TB oil

    Arrange the fried slices in a baking dish.

    Saute together until transparent:
    1 TB oil
    1/4 cup onions, chopped

    STIR IN:
    6 TB apricot jam
    5 TB frozen orange juice concentrate
    5 TB water
    2 TB prepared mustard
    1 TB vinegar
    1/2 tsp coriander
    1/2 tsp salt
    1/2 tsp ginger
    1/8 tsp garlic powder
    1/16 tsp cayenne (optional)

    Pour the sauce over the tofu and bake 10-15 minutes, until
    bubbling.
