Coconut Lime Cookies

List of Ingredients
1-1/4 cups all-purpose flour
1 tsp each: baking powder, baking soda
1/4 cup unsweetened desiccated coconut
1/3 cup sucanat
Grated zest of 1 lime
1/4 tsp sea salt
1/3 cup maple syrup
1/4 cup canola oil
3 tbsp fresh lime juice
1 tsp vanilla extract
1/4 tsp coconut extractRecipe
In large bowl, stir together flour, baking powder and baking soda. Stir in coconut, sugar, lime zest and salt.
In medium bowl, whisk together maple syrup, oil, lime juice, vanilla and coconut extract until well blended. Add to flour mixture. Stir until just blended. (Do not overmix.)
Place heaping tablespoons of batter 2 inches apart on 2 baking sheets lined with parchment paper. Bake each sheet in centre of oven 12 minutes, until cookies are puffed and starting to turn golden, but still soft. Cool no more than 1 minute on baking sheet before transferring to rack. Cookies will firm up as they cool.
Makes 18 to 20.
