Crustless Broccoli Quiche

1 small (~12oz.) bag of frozen brocoli & cauliflower mix (0 pts)
6 eggs (12 pts)
2 tbsp. light parmesan cheese (1 pt)
2 tbsp. 1% milk (0 pts)
4 oz. light cheddar or marble cheese, cut into 1" cubes (8 pts)
Dash of cayenne pepper (0 pts)
1 tsp. onion powder (0 pts)
1/4 tsp. salt (0 pts)
Pepper to taste (0 pts)
1/2 c. diced onion (0.5 pts)

Recipe
Preheat oven to 350F. Cook broccoli & cauliflower for 5 minutes or until tender crisp. Drain well. Put eggs, parmesan cheese, milk, cheddar cheese and spices in blender and blend until smooth. Set aside. Spray a nonstick pan with cooking spray and saute onions until translucent. Spray baking dish with cooking spray and place onions in the bottom of dish. Add broccoli & cauliflower on top of the onions and then pour blended egg mixture over top. Bake for 20 minutes or until knife comes out clean and golden brown around the edges. Let stand 5 minutes before serving.
