    Serve with pita or crusty bread.

    List of Ingredients




    1 medium onion
    1 large sweet potato
    1 can (14 oz) lite coconut milk
    1 Tbsp curry powder
    1 tsp salt
    1/8 tsp ground red pepper (cayenne)
    1 medium red bell pepper
    1 bag (20 oz) frozen cauliflower
    1 bag (1 lb) frozen baby bean and carrot blend

    Recipe



    1. Place a large pot over medium-high heat. Halve onion crosswise and potato lengthwise and thinly slice both (see Tip). Coat pot with nonstick cooking spray; add onion and potato and sauté 1 to 2 minutes until onion softens.
    2. Increase heat to high; add coconut milk, curry powder, salt and ground pepper. Stir to mix. Cover, bring to a boil and cook 2 minutes. Meanwhile halve and seed bell pepper and cut in 1-in. pieces.
    3. Add bell pepper to pot along with frozen vegetables. Bring to a boil and cook 8 minutes or until tender.

    Tip:
    To speed preparation, use the slicing disk of a food processor to slice the onion and sweet potato.
