    3 cups assorted vegetables, coarsely chopped
    2 Tbsp Olive Oil
    1 Tbsp Western Star Butter
    1 sheet ready-rolled puff pastry
    30g Western Star Butter, melted
    2 cloves garlic, crushed
    3 tablespoons fresh oregano leaves
    3 cups assorted vegetables, coarsely chopped
    1 medium tomato, coarsely chopped
    150g goat cheese, crumbled

    Recipe



    Preheat the oven to 220C. Line an oven tray with baking paper.

    Place the chopped vegetables in a roasting tray, lightly season with salt and pepper, and place in the olive oil and 1tablespoon of butter and mix quickly to combine. Place in the oven and roast until cooked.

    Place puff pastry sheet on lightly buttered tart tray, brush with some of the butter, and spread the base with the crushed garlic and 2 tablespoons of the oregano leaves.

    Top with roasted vegetables, tomato and goat cheese. Brush the rest of the melted butter over the vegetables. Bake, uncovered, in the preheated oven for about 20 minutes or until pastry is browned lightly.

    To serve, sprinkle with the remaining fresh oregano leaves and slice and serve warm.
