Indian Potato & Vegetable Curry

Serve with warm pita bread and plain lowfat yogurt seasoned with ground cumin and salt.
List of Ingredients
1 Tbsp vegetable oil
1 cup chopped onion
1 Tbsp minced garlic
1 Tbsp curry powder
1 tsp each ground ginger and salt
6 medium all-purpose potatoes (about 2 lb), scrubbed and cut in 3/4-in. cubes
2 cups frozen green peas
1 lb fresh spinach, rinsed and torn in bite-size pieces
Recipe
1. Heat oil in a large nonstick skillet. Add onion, garlic, curry powder, ginger and salt. Stir over medium heat until aromatic, about 2 minutes.
2. Stir in potatoes and peas. Add 1/2 cup water, bring to a boil, cover, reduce heat and simmer 10 to 12 minutes until potatoes are tender.
3. Add spinach, cover and steam for 2 to 3 minutes or until the spinach wilts. Stir, then serve.
