    Italian Zucchini Crescent Pie

    List of Ingredients




    4 cups thinly sliced zucchini
    1 cup chopped onion
    2 Tbs butter
    1/2 t. salt
    1/2 t. pepper
    1/4 t. basil
    1/4 t. oregano
    1/4 t. garlic powder
    1 egg
    1 egg white
    1/2 c. grated part skim mozzarella cheese
    2 Tbs dijon mustard
    1 8-0z package of Pillsbury reduced fat crescent rolls

    Recipe



    Preheat oven to 350 degrees. Saute zucchini and onions in butter for 10 minutes. Add all spices to the zucchini mixture. Turn off heat.

    In the meantime mix together egg, egg white and cheese.

    In pie or quiche plate, press dough from crescent rolls to form dough pie crust. Cover dough with mustard.

    Add egg mixture to vegetables. Pour vegetable mixture on top of dough. Bake at 350 degrees for approximaltey 30 minutes or until knife comes out clean in the middle. Cool for 5 minutes. Great as main dish or as side dish.
