Pesto, cherry tomato & bocconcini tarts

1 sheet of puff pastry
¼ cup commercial brand pesto
1 punnet of cherry tomatoes
150g baby bocconcini
salt and pepper
Recipe
Preheat oven to 180°C. Cut 9 x 5 cm circles with a cookie cutter. Place on a baking tray covered with baking paper. Using a slightly smaller cutter or a knife cut a circle ½ cm smaller and only half the way through the pastry. Spread a small spoonful of pesto within the border of the smaller circle.
Top with one or two cherry tomatoes (depending on size) and a bocconcini. Season well and bake for 12- 15 minutes or until golden.
