Polenta Pizzas with Herb Goat Cheese

5 ounces goat cheese (Chevré)
1 teaspoon McCormick® Basil Leaves
1 teaspoon McCormick® Thyme Leaves
1 tablespoon oil
2 cups sliced mushrooms
1 red bell pepper, cut in 1/4-inch strips and halved
1 roll (24 ounces) pre-cooked traditional polenta, cut in 1/4-inch thick slices
Recipe
1. Blend cheese with basil and thyme in a small bowl. Set aside.
2. Heat oil over medium-high heat in a large skillet. Add mushrooms and bell pepper; sauté 8-10 minutes or until done. Remove from heat and keep warm.
3. Place polenta slices on large baking sheet, coated with cooking spray. Broil 5-7 minutes per side. Spread herbed cheese mixture over one side of each slice. Top with mushrooms and peppers. Serve warm.
