Spicy Tofu with Peppers and Peanuts

Our dish brings some zesty heat to "boring" tofu -- good thing that preparing it is no sweat. Serve with rice tossed with sliced scallion greens; fresh pineapple chunks tossed with chopped candied ginger for dessert.
List of Ingredients
1 tbsp. canola oil
1 lb. firm low-fat tofu, drained and cut into 3/4-inch cubes
1/4 cup teriyaki sauce
1 tbsp. grated fresh ginger
2 - 3 tsp. Chinese hot chili paste with garlic or other hot sauce
2 - small green and/or red bell peppers, seeded and cut into 3/4-inch pieces
2 tbsp. chopped dry-roasted peanuts
Recipe
1 Heat oil in a large nonstick skillet over medium heat. Add tofu cubes and cook, stirring constantly to prevent sticking, until they begin to brown, about 3 minutes.
2 Add teriyaki sauce, ginger and chili paste. Stir and cook a minute or two to let the tofu soak up the flavor.
3 Add pepper pieces and cook until they soften, about 3 minutes. Sprinkle with peanuts and serve
