    Opposites attract in a harmonious veggie meal that's a little sweet and a little sour. Serve with grilled low-fat chicken sausage or sautèed pressed tofu; brown rice or whole-wheat bulgur tossed with minced scallion greens; sliced oranges for dessert

    List of Ingredients




    1/4 cup dark or golden raisins
    2 tbsp. balsamic vinegar
    2 tbsp. pine nuts
    1 tsp. olive oil
    2 lbs. fresh spinach, stemmed and washed
    2 - 3 '>anchovies, chopped OR 6 imported black olives, chopped

    Recipe



    1 Put raisins, balsamic vinegar and 2 tbsp. water into a bowl. Microwave on medium-high for 30 seconds. Remove from oven and set aside to plump for 10 minutes.

    2 Heat a large skillet over medium heat. Add pine nuts and shake in the pan until lightly browned, about 2 minutes. Transfer to a small bowl and put the pan back on the stove.

    3 Add oil to the pan. When hot, add the spinach, with water still clinging to the leaves, and stir until wilted. Add plumped raisins, anchovies or black olives, and pine nuts. Stir and cook another minute or two to blend flavors
