Summer Vegetable Pie

garlic, crushed
onion, diced
pepper, diced
courgettes, sliced
mushrooms, sliced
tin green lentils, drained
tin chopped toms
bag spinach
1/2 butternut squash, peeled & chunked
large baking potato, peeled & chunked
3 parsnips, peeled & chunked
3 points worth of cheese
Recipe
Saute garlic, onion and pepper in fry light until softened. Add courgettes and mushrooms, then lentils and half the toms. Simmer and slowly add the rest of the toms but don't let it go too watery. (a tsp of gravy powder will rescue it!)
Wilt the spinach. Boil the potato, parsnip and BNS until soft, drain and mash. Put the lentil mix in the bottom of a large oven dish, sprinkle some herbs over the top, then layer the spinach and finally the mash. Sprinkle the grated cheese over the top, use whatever you prefer up to the value of three points. Bake in the oven for 20-30 mins, until the top is golden and crispy.
