    List of Ingredients




    1 cup red lentils
    1 ½ cups water
    1 vegetable stock cube
    1 tbs olive oil
    1 onion, finely chopped
    2 tsp minced garlic
    2 tsp cumin seeds
    1 tsp ground coriander
    3 tbs lemon juice
    salt and freshly ground pepper to taste
    lemon wedges (optional) to garnish
    ¼ cup coriander, finely chopped (optional) to garnish
    4 medium pieces (80g each) Lebanese wholemeal bread, warmed

    Recipe



    Place the lentils, water and stock cube in a saucepan and bring to the boil. Reduce the heat and simmer for 10 minutes.

    Meanwhile, heat the oil in a non-stick pan. Add the onion and cook until soft and golden. Add the garlic, cumin and coriander and cook for another minute.

    Combine the lentils with the onion mixture and stir through the lemon juice. Place the mixture in a food processor and blend until smooth. Season with salt and black pepper and garnish with chopped coriander leaves and/or lemon wedges if desired. Serve with the warm Lebanese bread.
