roasted pumpkin w/ cashews & sesame seed

1kg pumpkin, seeded, peeled and cut into wedges
1 red onion, cut into thick wedges
1 tbs olive oil
60g cashews, roughly chopped
1 tbs sesame seeds
1 tbs olive oil, extra
1 tbs lemon juice
1 tsp Dijon mustard
salt and freshly ground pepper to taste
2 tbs parsley leaves
Recipe
Preheat the oven to 200oC. Toss the pumpkin and onion with the oil. Arrange in a single layer on a baking tray lined with non-stick baking paper. Bake for 1 hour.
During the last 5 minutes of cooking, place the cashews and sesame seeds on another baking tray and add to the oven. Cook for 5 minutes or until golden.
Whisk together the olive oil, lemon juice and mustard. Season with salt and freshly ground black pepper. Arrange the pumpkin and onion on a serving plate and drizzle over the dressing. Scatter over the parsley leaves, cashews and sesame seeds.
