200g Hokkein noodles
1 tbs soy sauce
2 tsp oyster sauce
60g roasted peanuts, chopped
1 cup bean sprouts
2 carrots, grated
1 shallot, chopped
2 tbs coriander, chopped
6 firm large lettuce leaves
Recipe
Place the noodles in a large bowl and cover with boiling water. Soak for 5 minutes until loose and softened. Drain.
Combine the noodles with the soy and oyster sauce. Stir in the peanuts, sprouts, carrot, shallot and coriander. Spoon the peanut mixture into the lettuce cups and serve.
