Pastry
1 ½ cups plain flour
30g light margarine
1 tbs lemon juice
½ cup water (approx)
Filling
1 bunch English spinach
2 shallots, chopped
1 tsp minced garlic
1 tbs fresh parsley, chopped
3 eggs, lightly beaten
60g light tasty cheese, grated
½ cup skim milk
½ cup buttermilk
Recipe
Preheat oven to 210°C. Coat a 23cm flan tin with cooking spray.
Sift the flour and rub in the margarine. Stir in the lemon juice and enough of the water to make a firm dough. Add extra water if necessary.
Press dough into a ball, wrap in cling wrap and refrigerate for 30 minutes.
Between two sheets of baking paper, roll dough out to fit flan tin. Trim sides. Cover pastry with baking paper and bake for 10 minutes.
Remove the rice and paper and bake a further 10 minutes. Cool.
Filling
Microwave the spinach until wilted, drain well. Place the spinach over the pastry base.
Cook the shallots and garlic in the microwave for 1 minute on High. In a medium bowl combine the shallots, garlic, parsley, cheese, eggs and milks. Mix well.
Pour mixture over the spinach and bake for about 25 minutes or until set and lightly browned.
