    Atlantic Salmon Burger w Wasabi Mayo

    List of Ingredients




    1 lb cooked salmon 450 g
    (boneless, skinless)
    2 tbsp mayonnaise 30 ml
    2 tbsp sour cream 30 ml
    1 tbsp lemon juice 15 ml
    1/4 cup parsley 60 ml
    1 med onion, coarsely chopped 1 med
    1 med sweet red pepper 1 med
    1 tbsp sweet chilli sauce 15 ml
    1 tsp salt 5 ml
    2 cups bread crumbs 500 ml
    4 Italian buns 4
    8 slices white onion 8 slices
    4 pcs lettuce leaves 4 pcsj

    Recipe



    1. Preheat oven to 425°F (220°C). Set aside 1/2 cup
    (125 ml) bread crumbs.
    2. In the T-FAL KALEO Food Processor bowl, place the
    parsley, onion and sweet pepper and pulse to chop.
    3. Add salmon and 11/2 cups (325 ml)of the bread crumbs and pulse until salmon is flaky.
    4. Add the mayonnaise, sour cream, chilli sauce, lemon juice and salt. Pulse until well combined.
    5. Form the mixture into 8 cakes. Coat with remaining bread crumbs.
    6. Bake on a non-stick baking sheet for 25 minutes, turning
    once to brown evenly. Top with wasabi mayonnaise. Serve on
    a bun and garnish with onion slices and lettuce leaf. Serves 4.

    Wasabi Mayonnaise:
    1 cup mayonnaise 250 ml
    2 tsp wasabi paste 10 ml
    2 tbsp lime juice 30 ml
    salt, to taste
    Mix all ingredients in a bowl. Adjust seasoning.
    Serve with Salmon Burgers.
