    3 tsp olive oil
    One 2 1/2- to 3-lb broiler-fryer chicken, cut in eighths, skin removed, visible fat cut off
    2 bell peppers, sliced
    10 oz mushrooms, cut in half
    1 medium onion, sliced
    2 tsp minced garlic
    1 can (28 oz) peeled tomatoes in thick purée
    1 orange, peel removed with vegetable peeler in strips
    3/4 tsp salt
    1/2 tsp each pepper and dried thyme

    Recipe



    1. Heat 1 tsp oil in 5-qt Dutch oven over medium heat. Add chicken in batches and cook until browned. Remove to a plate.

    2. Add remaining 2 tsp oil to pot along with peppers, mushrooms and onion. Sauté 10 minutes or until lightly browned. Push aside; add garlic and sauté until fragrant.

    3. Add chicken, tomatoes, orange peel, salt, pepper and thyme. Carefully break up tomatoes with side of a spoon. Bring to a boil, reduce heat, cover and simmer 40 minutes or until chicken is cooked through (see For Safety’s Sake, page 104) and easy to pull off the bone.

    4. Spoon onto serving platter, removing orange peel.
